This extra virgin olive oil is made exclusively from the rare Ortice variety, hand-picked between November and December. It is cold-pressed the same day, using only mechanical methods and without oxygen exposure, to prevent oxidation and preserve quality.
Processed below 30 °C and with hammer milling, the oil retains its natural protein and antioxidant properties.
The result: a vibrant green, aromatic oil with grassy freshness and a slightly peppery finish.
